  Meet me now and it’s hard to believe that, for decades, I was the worst cook ever (just ask my friends) and spent very little time in the kitchen and even less in the gym. Eating healthy and exercising weren’t even on my radar. Now, at age 67, I’m a world-class vegan chef, a fitness coach, a motivational speaker and the owner of Stuff I Eat, a successful vegan soul food restaurant in Inglewood, California. I’m also the healthiest I’ve ever been. How did this incredible transformation come about? Like a great recipe, it took time for all the ingredients to come together.


  My Mom’s Cooking


  The first ingredient was my mom’s cooking. I grew up on the Eastside of Los Angeles. My mother was a cook for a couple households on the Westside. I saw her on the weekends and, during the week, stayed with my godmother, who was a vegetarian. She served frozen or canned foods. Bland, boring, tasteless—that was my impression of a vegetarian diet. Very different from what my mom whipped up. She loved to cook, and everything that came out of her kitchen was delicious: chitterlings, smothered pork chops, baked chicken, cornbread, even the vegetables—because she put sugar in them. “When I was a kid, vegetables came from the garden and had a beautiful, sweet flavor,” she would tell me. “These vegetables from the store aren’t like that, so I sugared them up.” And her desserts were to die for!


  I was crazy about sweets. There were candy factories in our neighborhood, and I’d go Dumpster diving behind them and gobble up all kinds of discarded candy. That’s how addicted I was to sugar. And it showed. My teeth were a mess.



  지금의 나를 본다면 믿기 어렵겠지만, 수십 년 동안 나는 요리에 전혀 소질이 없었다. (그저 내 친구들에게 물어보면 된다.) 부엌에서는 시간을 거의 보내지 않았고, 운동에 들인 시간은 훨씬 더 적었다. 몸에 좋은 음식을 먹고 운동하는 건 내 관심사가 아니었다. 이제 예순일곱 살인 나는 세계적인 채식 요리사이자 피트니스 코치이며, 동기부여 강사인 동시에 캘리포니아 잉글우드의 잘나가는 채식주의 소울 푸드(미국 남부 흑인들의 전통 음식-역주) 레스토랑 ‘스터프 아이 잇’의 주인이기도 하다. 그리고 지금 나는 그 어느 때보다도 건강하다. 이 놀라운 변화가 어떻게 일어났는가? 훌륭한 레시피가 그렇듯이, 모든 요소가 어우러지는 데에는 시간이 좀 걸렸다.


  엄마표 요리


  첫 번째 요소는 엄마의 요리였다. 나는 로스앤젤레스의 이스트사이드에서 성장했다. 엄마는 웨스트사이드의 두 가정에서 요리사로 있었다. 엄마는 주말에나 볼 수 있었으므로, 주중에는 채식주의자였던 대모와 함께 지냈다. 대모는 냉동식품이나 통조림 식품을 냈는데, 단조롭고 넌더리 나는 데다가 별맛도 없었다. 그게 바로 채식에 대한 내 인상으로, 엄마가 뚝딱 만들어내던 것과는 딴판이었다. 엄마는 요리를 좋아했고, 엄마의 부엌에서 등장하는 것은 모두 맛있었다. 돼지 곱창, 소스를 듬뿍 바른 폭찹, 구운 닭, 옥수수빵에 채소까지도 맛있었다. 엄마가 설탕을 넣었기 때문이다.
“엄마가 어렸을 땐 마당에서 채소를 가져왔어. 그러면 근사하고 달콤한 향이 났단다. 가게에서 사 온 이런 채소는 그렇지 못하니까 설탕을 뿌렸지.”

엄마의 얘기였다. 그리고 엄마의 디저트는 정말 대단했다!


  나는 단 음식을 굉장히 좋아했다. 우리 동네에는 사탕 공장이 있었다. 공장 뒤편의 쓰레기통을 뒤져 온갖 종류의 버린 사탕을 게걸스럽게 먹어댔다. 그렇게 나는 설탕 중독이 되었다. 그리고 그 결과, 내 이는 엉망진창이었다.
